Sesame Asparagus  

This dish is a simple, but delicious side dish for any time of the day. Goes well with any meat or seafood entree or with an omelette.
 
 

 

INGREDIENTS

2 tablespoons sesame seeds
1/2 cup toasted cashew nuts
3 tablespoons sesame oil
1 green onion, chopped
2 pounds asparagus, trimmed, peeled, and roll-cut
1 1/2 tablespoons soy sauce
1 teaspoon fresh ground ginger
 



METHOD

Preheat the oven to 300° and place sesame seeds on a baking sheet coated with DuPont SilverStone® non-stick. Coarsely chop the cashews and place them on another baking sheet coated with DuPont SilverStone® non-stick. Put nuts in the oven. Cook seeds for 6 to 8 minutes or longer, until seeds begin to change color. Remove from the oven and slide off the non-stick baking sheet; set aside. Do the same for the cashews, cooking until they start turning color. Watch nuts carefully as they can burn quickly.

Heat sesame oil in a large non-stick skillet or wok coated with DuPont SilverStone® non-stick until hot. Add the green onion and asparagus, lower heat to medium, and cook, tossing frequently, for about 3 minutes. Add the soy sauce and nuts, and toss. Sprinkle with the ginger, and cook over medium heat another 3 minutes. Serve immediately.
