Recipe:Apple Pecan Cheesecake

Apple Pecan Cheesecake  

This cheery cheesecake will make you glad that autumn has arrived. As a variation, mix the cracker crumbs with an additional 1/2 cup of toasted finely chopped pecans.
 
 

 

INGREDIENTS

Crust:
1 cup graham cracker crumbs
3 tablespoons sugar
1/4 cup butter, melted
   
Filling:
2 (8-ounce) packages cream cheese
1/2 cup sugar
2 eggs
1/2 teaspoon vanilla extract
   
Topping:
4 cups thinly peeled apples (such as gala or golden delicious)
1/3 cup sugar
1 teaspoon cinnamon
1/2 cup chopped pecans
 



METHOD

Preheat the oven to 350°. In a small bowl, combine the crumbs, sugar, cinnamon, and butter. Using your fingers, press onto the bottom and sides of a 9-inch springform pan coated with DuPont SilverStone® non-stick.

In a large mixing bowl, combine the cream cheese and sugar, beating at medium speed, with an electric mixer until well-blended. Add the eggs, one at a time, mixing well after each addition. Blend in the vanilla. Pour the mixture into the prepared crust; set aside.

In a medium bowl, toss the apples with the sugar and cinnamon. Spoon the apple mixture over the cream cheese layer. Sprinkle the pecans over the top. Bake for 1 hour and 10 minutes or until the center is set and springs back with the touch of a finger. Loosen the cake with a sharp knife around the rim of the pan. Cool on a wire rack.
