French toast now is still a cinch to prepare, yet has a new personality.
Assorted breads, seasoned batters, daring syrups and sauces, and
creative cooking methods add a new twist to French toast, from soufflés
and pies to savory sandwiches.
By
definition, something is considered French toast if it is made with
bread dipped in an egg batter and fried or baked. Yet, using up
stale white bread is no excuse to make French toast. It has become
quite fashionable to serve this classic not only for breakfast,
but also for lunch and dinner as well. Originally called pain perdue
(meaning lost bread), this French creation is easy to make. All
you need is dipping batter, a filling if desired, and a complementary
syrup.
