Recipe:Mini Goat Cheese and Sun Dried Tomato Pizzas

Mini Goat Cheese and Sun Dried Tomato Pizzas
A tangy but buttery spread forms the intriguing background taste for these hors d' oeuvre-style pizzas. The dough can be made from scratch, or see if your supermarket carries the very small pita breads.

 

INGREDIENTS

8 ounces premade pizza dough in a tube
  All-purpose flour for dusting
6 tablespoons butter, softened
2 tablespoons fresh-mix Italian herbs, finely chopped
1/2 teaspoon grated lemon peel
1 teaspoon fresh lemon juice
2 tablespoons minced black olives
1 medium-sized tomato, (about 3-1/2 inches) thinly sliced
8 small button mushrooms, thinly sliced
16 pieces sun-dried tomatoes (in oil), drained
4-6 ounces goat cheese
4 green-stuffed olives, sliced in half
  Basil leaves and/or oregano sprigs for garnish
 



METHOD

Preheat oven to 400°.

Remove the pizza dough from the package and cut the dough into 3/4-inch-thick slices with a sharp knife. Flour a surface and, using a rolling pin, roll each dough slice into a 4-inch- diameter circle; set aside.

In a small bowl, whisk the softened butter with the herbs, lemon peel, lemon juice and olives; set aside. Place the pizza circles about 1/2 inch apart on a baking sheet coated with DuPont SilverStone® non-stick. Brush each circle with the butter mixture. Add a slice of tomato over the herbal butter, followed by a few slices of mushroom and the sun-dried tomatoes.

Place a slice of goat cheese over the top and finish with a half of green olive. Bake for 15 to 20 minutes or until the cheese is melted. Serve garnished with basil leaves or oregano sprigs.
