A Glowing Holiday Dinner
 
Mixed Salad with Creamy Garlic Dressing
Makes: 3 cups  
 


Mixed Salad with Creamy Garlic Dressing  

Using prewashed salad mix containing such greens as chicory, dandelion or red-leaf radicchio will simplify your holiday entertaining preparations. Keep extra dressing in a tightly-sealed container in the refrigerator.
 
 

 

INGREDIENTS

1 1/2 cups vegetable or canola oil
  1/2 cup fresh lemon juice
1 teaspoon salt
1 teaspoon paprika
1 teaspoon fresh milled black pepper
4 cloves garlic, coarsely chopped
1/2 teaspoon honey
3/4 cup evaporated milk
 



METHOD

Place all of the ingredients into a bowl. Mix lightly with a wire whisk. Put half of the mixture into a blender, mixing just enough to incorporate. Add the remaining portion and finish off by blending for an additional 30 to 45 seconds.
