Sesame Fried Chicken with Plum Sauce

Sesame Fried Chicken w/ Plum Sauce  

Sweet red plums and the tangy flavor of fresh lemon add a comforting taste to the poultry.
 
 

 

INGREDIENTS

Sauce:
3 pounds red plums
1 cup sugar
1/4 cup honey
4 teaspoons clear gelatin
1/2 teaspoon fresh lemon juice
   
Chicken:
1 cup breadcrumbs
1/3 cup sesame seeds
1/4 cup grated Parmesan cheese, plus more for garnish
2 tablespoons chopped fresh cilantro
1/2 teaspoon salt
1/4 teaspoon white pepper
3 tablespoons butter, melted (substitute with whole milk)
4 (3-ounce) boneless, skinless chicken breasts
 



METHOD

Begin with the sauce. Pit and slice the plums (skin on). In a 1 to 2-quart saucepan coated with DuPont SilverStone® non-stick, heat all of the sauce ingredients over a medium flame until thickened (about 10 minutes), tasting at least once and adding more sugar or honey to taste, if necessary. Keep warm until ready to pour into a container for the tailgate party. The sauce may be served warm or at room temperature.

In a medium bowl, combine the breadcrumbs, sesame seeds, cheese, cilantro, salt, and pepper. Dip each chicken breast into the butter. Heat a skillet coated with DuPont SilverStone® non-stick (sprayed with a non-stick oil, if desired) and cook for 5 minutes on each side. Keep warm and then pack in an airtight container for the picnic. Serve sprinkled with long-grated slivers of Parmesan cheese.
