Cheese and Cilantro Egg Roll-Ups with Salsa Fresca

The salsa may be prepared a day ahead of time, yet the egg roll-ups need to be served immediately after baking. Garnish with fresh edible flowers and a sprinkle of cilantro for a lovely finishing touch. This recipe was provided by The Gastonian Inn, Savannah, Georgia.

 
 

 

INGREDIENTS

Salsa:
1 teaspoon minced jalapeno or hot pepper
2 cups fresh seeded plum tomatoes, cut into a bite-size dice
1/4 cup chopped yellow onion
3 tablespoons finely chopped trimmed green onion
2 tablespoons finely chopped fresh cilantro
 
Roll-Ups:
1 cup milk
6 eggs
1/2 cup all-purpose flour
1/4 cup butter, melted
1/4 teaspoon cayenne pepper
2 teaspoons finely chopped fresh cilantro
1 seeded and finely chopped jalapeno pepper
1 cup shredded Cheddar cheese
1 cup seeded fresh plum tomato, cut into a small dice
 



METHOD

In a medium bowl mix together the salsa ingredients. Refrigerate until ready to use. To make the roll-ups, preheat oven to 400°. Place a sheet of parchment paper over a jellyroll pan coated with DuPont SilverStone® non-stick. Lightly grease the parchment.

In a medium-sized bowl of an electric mixer, combine the milk, eggs, flour, butter, pepper, cilantro, and jalapeno pepper. Mix on medium until frothy and well blended. Transfer the batter onto the pan and bake for 18 to 20 minutes or until the roll is set and slightly puffed. Remove the pan from the oven and sprinkle with the cheese and chopped tomato. Beginning with the short end, carefully roll so that the roulade stays together. Slice into 1-inch pieces and serve with the salsa.
