Popovers Popovers


Popovers are great for breakfast, as they are easy to make using simple ingredients. Popovers are the specialty of the house at Adair. The innkeeper suggests preparing the batter a day in advance and letting it refrigerate overnight. Serve the popovers with quality preserves and butter. Adair makes giant popovers, but this recipe will yield several more when using regular-size muffin tins or popover tins coated with DuPont SilverStone® non-stick. This recipe was provided by The Adair Country Inn, Bethlehem, New Hampshire.

 
 

 

INGREDIENTS

6 eggs
1/4 teaspoon salt
2 cups milk
6 tablespoons butter
2 cups all-purpose flour
 



METHOD

Preheat oven to 400°. Grease 6 (4-inch) ramekins and place them on a sheet pan coated with DuPont SilverStone® non-stick. Beat the eggs in a bowl and stir in the salt, milk, and butter. Add the flour, stirring with a fork until incorporated. Do not overmix; the batter should be lumpy. Fill each cup 3/4 full and bake for 45 minutes or until golden brown (it may take up to 15 minutes more depending on size of tin and oven).

When the innkeepers took over this sprawling Georgian Colonial manor house on the New England countryside, it came with a collection of old hats. Many had been worn by the home's original owner, who lived in the house from 1927 until 1991. Today, guests enjoy trying these on the during their stay.
