Pita is a pocket bread that is split horizontally for stuffing. Made
with white or whole-wheat flour, Middle Eastern pita saves on calories
because the breads are usually fat-free. |

INGREDIENTS

olive oil |

cremini mushrooms, thinly sliced |

medium
onion, sliced thin |
| 1/4 |
cup
finely chopped yellow bell pepper |
| 2 |
pita
breads, cut in half |
| 1 |
cup chopped fresh spinach |
| 12 |
slices
smoked Mozzarella cheese |
| 6 |
tablespoons
chopped black olives |

METHOD
|
|
Heat
the olive oil in a small skillet coated with DuPont SilverStone®
non-stick. Sauté the mushrooms and onions until the onions are lightly
browned. Remove from heat and divide evenly among the 4 pita breads.
Add the spinach to the bread and place 3 slices of cheese into each
pocket; evenly top with the olives. Return the skillet to the stove
and heat. Place the sandwich in the pan and grill until golden brown
and the cheese has melted. (Note: Butter is optional for grilling
the sandwiches; add if desired.)
