Tofu Peanut Dip
Servings: 2 cups  
 
Tofu Peanut Dip
Tofu takes on the flavor of whatever it is cooked or mixed with. In this recipe, the tastes of the Orient give the tofu a light and pleasant ginger/peanut flavor. Serve this dip with raw or lightly steamed vegetables. Your guests will never know it's "that healthy tofu stuff."

 

INGREDIENTS

1/3 cup high-quality creamy peanut butter
1/4 cup hot water
1 10-ounce box silken tofu
2 tablespoons apple cider vinegar
1 tablespoon soy sauce
1 medium garlic clove, minced
1/2 teaspoon salt
2 teaspoons grated fresh ginger
  Cayenne to taste
2 tablespoons minced cilantro
  Honey or sugar to taste
1/2 cup finely chopped toasted peanuts
 

 

METHOD

Place all ingredients except for the peanuts into a food processor or blender and puree until smooth. Transfer the mixture to a bowl or container with lid. Taste, adjust seasonings and refrigerate. When ready to serve, sprinkle peanuts over the top.
